Firstly we should clear up any confusion from the name of this module. It is not restricted to items from the News section / category. The Latest News module will by default show the latest items from all of your sections / categories.

If you wish, you can specify that the module only shows latest items from e.g.

a single category
a number of categories
a single section
a number of sections

To do this you need to specify the id of your categories /sections in the module parameters.

modules->site modules->latest news - parameters

You can specify a particular section or category.

You can look up a category or section id in the section or category manager.

Also, if you wish to have 2 or more latest news modules showing different categories, you can use the COPY button in the module manager to make copies of the module and give each one different settings. Just select the module you wish to copy and click the copy button.
